Ingredients:

  • ¼ cup of oat flour
  • 1 cup of pumpkin puree
  • ¾ cup of Greek yogurt
  • 2 large eggs
  • ½ cup of vanilla protein powder
  • ½ teaspoon of pumpkin pie spice
  • 1 teaspoon of cinnamon
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • ½ cup of dark chocolate chips

Instructions:

  1. Preheat the oven to 350℉.
  2. Mix the oat flour, pumpkin, Greek yogurt, eggs, protein powder, pumpkin pie spice, cinnamon, baking powder, and baking soda in a large mixing bowl using a hand mixer or wooden spoon.
  3. Add in the chocolate chips. But keep some to sprinkle on the top!
  4. Evenly distribute the mixture into 12 greased muffin liners.
  5. Bake for 25-30 minutes or until a toothpick comes out clean.
